An original recipe from the experiments of Alan Simmons.
Combine...
1/2 cup rice
One green tomato, diced small
ten baby carrots, snapped in half
1.25 cups water
1/2 tsp McCormick's Perfect Pinch Original Salt Free Spice
1 tsp ground cinnamon
1/4 tsp black pepper
Set to medium heat in a stick free pan and cover.
Stir occasionally
Lower heat to low simmer once moisture is gone.
The idea is to sear the lower edges slightly, but not to burn or char.
Remove from heat and stir apart into tiny clumps.
Cover and let stand.
MEANWHILE,
Create the sauce in a separate sauce pan set to high heat.
Blend...
1/2 cup Silk Vanilla Soy Milk
5.3 oz cup of Chobani Pineapple Greek Yogurt
2 eggs
1/2 tsp Tony Chachere Salt Alternative
1 tbsp ground cinnamon
Stir continuously.
Vary heat from high to medium as the mix begins to boil.
The idea is to keep the mix hot as possible without splatterings.
Stir and apply heat til you see the egg white slivers turn white.
NOW ...
Pour the first rice mix into 2-4 bowls depending on portions.
Cover each bowl with the now thickening sauce.
Add a tiny amount of Silk Vanilla Soy Milk.
Stir and top with a dash of ground cinnamon for color.
Sweet. Healthy. Low sodium. Low fat. Reasonable carbs.
Note to diabetics...
Never eat more than half this portion in one setting.
We need no more than 1/4 cup of uncooked rice in a serving.
Good served hot or cold.
